Sumalak -queen of dishes during Navruz

A group of female students and professors from "Hydromelioration" faculty of "TIIAME"National Research University actively participated in the Sumalak festival. The word "Sumalak" is derived from the ancient Turkic word "suma," which means "made for syrup" or "crushed barley."
To prepare Sumalak, first, wheat grains are thoroughly washed and soaked in cold water for a day. The next day, the wheat is spread on a flat surface to a thickness of 2-2.5 cm. The room where the wheat is germinated should be cool and dark. The person germinating the wheat must water it four times a day. This process continues until the wheat sprouts.
Typically, wheat sprouts within a week. However, if the wheat grows too much, the Sumalak will be ruined, so special attention must be paid to this. For every 1 kg of wheat, 4 kg of flour is added. Sumalak, being one of the spring delicacies, is loved by everyone, and saying that everyone enjoys it would not be an exaggeration. The entertainment, games and dances organized by our female students added to the festive mood and uplifted everyone's spirits.
